Chickpea is a kind of vegetable native to the Mediteranean regions. Also called “cese” in Provence and cultivated since many times on terraces, it enters into a composition of typical dishes, such as la panisse, la socca, la cade. We should not forget to mention “Le Pois Chiche des Rameaux”, which is presented on the Provencal Easter’s tables.

Aix&terra manufactures its local hummus with organic chickpeas. The seeds are kneaded with olive oil and shallots until having a creamy puree, seasoned with mustard and a drizzle of lemon juice. La manufacture aix&terra honors the red pepper to make this original recipe. Added in the Hummus, it slightly colors the chickpeas cream and gives it a unique taste, sweet in the mouth with a very subtle spicy finish.

How to use it ?

The hummus with red pepper replaces the mayonnaise of the mimosa eggs, accompanies a white fish like a back of cod or a sea bream. It is also delicious on a toasted bread as an aperitif, served with a rosé wine Château Saint-Roseline PDO Côtes-de-Provence.
